I am currently in the process of trying to complete too many projects (for a change!!). I really do need to try and organize my thoughts and work a little more, as I frequently find myself getting into a bit of a tizz! The past day or so I have been packaging cards that have been sitting on my desk waiting patiently for me to stop avoiding the inevitable (this is the part of the process I cannot stand). I am also (amongst other things.... the list too long to start thinking about for fear of becoming dizzy) finishing hand stitching the binding on to another baby quilt/playmat... a process I actually find quite therapeutic and to be honest, a little obsessive!
Anyway, I wanted to share my supper experience. Tonight is swimming night and tea is therefore a bit of a rushed affair in our house. I did however have the pleasure of creating my own feast once the children were in bed.
This has to be one of my favourite suppers.... 'posh people's cheese on toast' .....hmmmm....
toasted (or griddled for a much better flavour) ciabatta
chopped tomato, feta and olives mixed together with olive oil and then simply piled on top.
I then decided I would stick a load of spinach leaves on top, also fab with rocket, a little drizzle of olive oil and a splash of balsamic vinegar...
... and a (small!) glass of wine!!!
Please do try this out if you haven't experienced it before, you will be shocked at its fabulousness!!
Oh, and don't forget to put your pinny on. I foolishly left mine of, I guess because I wasn't cooking a meal, and have ended up with oil on my top. To be honest though, it may be they way I was greedily devouring it!!
